Ingredients:
For making this dish, take 1 cup of gram flour (besan) and 1 cup of fresh curd (yogurt). These two ingredients form the base. Add 2 cups of water to it and mix well so there are no lumps and the mixture becomes smooth. This will be the main batter for the recipe. For tempering (tadka), you will need 2 tablespoons of pure groundnut oil, which gives a rich taste and aroma. In the hot oil, you will add 1 teaspoon of mustard seeds and 1 teaspoon of sesame seeds to bring flavor and texture. Also add 2 green chilies, finely chopped, to give a bit of spiciness. Then add a pinch of turmeric powder for color and a light earthy taste. Finally, add salt as per your taste to balance all the flavors.
How to Make:
Step 1: Prepare the batter
In a mixing bowl, take gram flour (besan). Add fresh curd, water, a pinch of turmeric powder, and salt to taste. Mix everything very well using a whisk or spoon until the batter becomes smooth and without lumps. The batter should be thin and easy to pour.
Step 2: Cook the batter
Pour this smooth mixture into a non-stick pan or a heavy-bottomed kadai. Place it on low flame and keep stirring the batter without stopping. Stirring continuously is important to avoid lumps. After a few minutes, the batter will start getting thick. Cook it until it becomes smooth, thick, and slightly sticky. It should be thick enough to spread easily.
Step 3: Spread and roll the khandvi
Once the batter is ready, quickly take the hot mixture and spread it on the back of greased plates, thalis, or a clean kitchen surface. Use a flat spoon or spatula to spread it evenly into a thin layer. Let it cool for a few minutes until firm. Then cut it into long strips using a knife. Roll each strip tightly from one end to make neat khandvi rolls.
Step 4: Prepare the tempering
In a small pan, heat pure groundnut oil. Once hot, add mustard seeds, sesame seeds, and finely chopped green chilies. Let them splutter and become aromatic. This is your tadka.
Step 5: Finish and serve
Pour the hot tadka evenly over the rolled khandvi. Garnish with fresh chopped coriander leaves. Serve the khandvi as a light, delicious snack or starter.
